recommending the intervals between cleans as stated by the Health and Safety
Executive and the Confederation of British Insurers.
Although the filters within the canopy help to trap grease
and prevent it from entering the duct, they can only stop so much. Grease
will enter the duct; coating the extractor fan and internal walls of the
ducting, lowering efficiency of the system and creating a possible fire risk.
Leaking grease from the exit point of the duct can lead to complaints from
neighbouring businesses and residents due to the build up of grease
causing foul odours and the potential of injury to persons slipping on
untreated grease.
It is imperative that these hazards are
kept at bay with a regular clean from a

Recently more and more kitchens have
gas interlock systems installed which
monitors air andgas flow within the duct
and kitchen canopy, grease deposits
disrupts the air flow, disabling the
kitchens gas supply until the grease
within the system and ducting is
thoroughly cleaned.
